Why English doubles a letter: Very often the doubling keeps the vowel before it short. Say hoping and then hopping. In hoping the o is long; in hopping, with the double p, the o is short. The same happens with diner and dinner, later and latter.
Where to hunt for more: Open any page of this book and run your eye down it. Double letters are everywhere — gilli, millet, bullock, all, well, small. Keep a page in your notebook and add every new one you find.
